Summer Treats In The Heat
We are now in the heart of summer and the heat is turning up! This time of year, there’s nothing better than coming inside after being out in the sun and having a refreshing snack and a cold drink ready for you. Here are some quick and easy recipes to try out this summer:
Cucumber Sandwiches- That’s right! They aren’t just for tea parties. Cucumber sandwiches are an easy and fun way to enjoy a light lunch or even a snack. The best part is that they only take a few simple steps to make. First, cut your cucumber into slices (peeling it first is optional). Then you’ll want to make your spread by mixing one package of softened cream cheese, a few tablespoons of mayonnaise, lemon juice, and dill together until smooth. Season with salt and pepper to taste and then spread onto your choice of bread. Layer on your cucumbers, close up your sandwich and enjoy!
Watermelon Greek Salad- This recipe puts a twist on a traditional Mediterranean dish. You’ll need grape tomatoes, a cucumber, Kalamata olives, chickpeas, avocado, feta, lemon juice, olive oil, and spices. First, chop all of your veggies to bite sized pieces and add them to a large mixing bowl. Add in crumbled feta, freshly squeezed lemon juice, and a drizzle olive oil over top. Don’t forget your spices! I like to use salt, pepper, garlic, oregano, and dill. Lastly, give it a good mix to evenly coat all of the ingredients and it’s ready to serve!
Blackberry Mint Mocktail- Summer is a great time to enjoy a drink by the pool, but that doesn’t mean it has to have alcohol in it! Whether you don’t drink or are taking a break from alcohol, this summer mocktail is sure to impress and it’s only 5 ingredients: blackberries, mint, honey, lemon juice, and seltzer water. In a cocktail shaker muddle a few blackberries, honey, and 1 sprig of mint. Then, add lemon juice, give it a good shake, and strain it into your glasses. Top it off with seltzer water as well as your blackberry/mint garnish and your pool-party ready! Pro tip: You can make a large pitcher of this for gatherings, just be sure to keep the seltzer water closed until party-time so it doesn’t lose its carbonation.
